COLD INFUSION

You use cold water instead of boiling water to make a cold infusion. Use a quart canning jar and put 1 cup of cold water in it. Bundle about 10 ounces of dried herb in the coffee filter and tie it shut. Place it in the jar and infuse overnight with the lid on.

Infusions are best used for herbs with leaves or flowers. Those that have more woody stems, roots, berries, bark of seed need to be prepared with a decoction.

DECOCTION

In a stainless steel or enamel saucepan, place 3 tablespoons of dried herb. Cover with 1 quart of cold water. Turn the heat on to medium high and bring it to a boil. Let it simmer for about 20 to 40 minutes and remove from the heat and let it cool. Strain and use the resulting liquid. A decoction can also be stored in a covered glass jar in the refrigerator for about 1 week. It is best to use dark colored jars or bottles to store decoctions so they don’t evaporate quickly. You can place a clean sock over the jar or bottle to protect it from light.
